Turkey Stuffed Peppers

While you can enjoy this gluten-free delishiousness in any color peppers, I’m VERY partial to the orange ones 🙂

Turkey Stuffed Peppers

Servings 4

Ingredients

  • 1 lb ground turkey
  • 2 14.5 oz cans diced tomatoes with green chilies drained
  • 2 c corn kernels
  • 4 large bell peppers cut in half, seeded
  • 2/3 c water
  • 1 c cheddar cheese

Instructions

  1. Preheat oven to 400F degrees.

  2. Brown turkey over medium heat in a large skillet, drain excess fat. (I usually add a little olive oil to the skillet to prevent sticking.)

  3. Add tomatoes and corn, cook for 5 minutes and then remove from heat.

  4. Place peppers in a 9x13 baking dish.

  5. Spoon turkey mixture into peppers.

  6. Pour water into dish around peppers and cover with foil.

  7. Bake for 30 minutes.

  8. Carefully remove from oven and lift foil (watch out for steam!!).  Sprinkle cheese over each pepper and bake an additional 10 minutes, uncovered.
