Sausage Spinach Potato Frittata {Whole30} {Paleo}

I promise this recipe tastes better than it photographs HAHA!

Sausage Spinach Potato Frittata

Servings 6

Ingredients

  • 1/2 t olive oil
  • 1 onion chopped
  • 1 lb pork sausage
  • 1 yellow pepper chopped
  • 1 c mashed potatoes I typically use leftovers!
  • 9 eggs
  • 1 c liquid egg whites
  • 2 handfuls baby spinach leaves

Instructions

  1. Preheat oven to 375F derees

  2. In a medium skillet, heat olive oil. Add onions and cook a few minutes until softened. Add pork sausage and cook until browned. Drain any grease.
  3. Line a pie plan with parchment paper. Fill with sausage mixture. Top with peppers. With a small spoon, place dollops of potatoes across the top.
  4. In a small bowl, lightly beat eggs. Pour over other ingredients in pie pan. Top with liquid egg whites. Shake the pie pan lightly such that eggs fill throughout. Top with spinach
  5. Bake for about 1 hour. You will want to shake the pan lightly to make sure the frittata does not jiggle too much.
  6. Allow to sit for 5-10 minutes and then serve in triangle slices.
