No meal is more summer to me than a Lobster Roll! From Boston, MA to Naples, FL, these go hand in hand with sun and sea for me. My version below is Whole30 approved and just a delicious!! Enjoy!
3 c lobster meat, chopped (I used 3 lobster tails)
1/4 c mayonnaise (I love Primal Kitchen Avocado mayo - see link below)
1/4 c celery, chopped
1/4 c green onion, chopped
1 T lemon juice
8 leaves, Boston lettuce
Combine all ingredients, except for lettuce. Refrigerate for at least an hour. Place lettuce on a plate and top with lobster salad. Enjoy as a wrap or with a fork!
